Paul Signorelli OAM is an accomplished Australian entrepreneur, philanthropist, and community advocate, renowned for his leadership in the hospitality industry and his unwavering commitment to social impact.
As Executive Chairman and owner of Doltone Hospitality Group, Paul brings over 30 years of expertise in venue development, operations, and strategic growth. Under his guidance, the Group has evolved into a multi-faceted enterprise that owns and operates the award-winning Doltone House venues across Sydney, recognised for delivering world-class experiences across corporate, private, and large-scale events.
Paul’s vision has driven the Group’s expansion to include Ovation Hospitality Services in New Zealand, Doltone Defence Services, and the recently launched Hay St Market an international food precinct located in Sydney’s iconic Paddy’s Markets, celebrating multicultural cuisine and cultural activations.
In 2008, Paul founded the Biaggio Signorelli Foundation in honour of his father, who passed away from mesothelioma, a rare and aggressive cancer caused by asbestos exposure. Since its inception, the Foundation has raised over $15 million for mesothelioma research, awareness, and treatment—cementing Paul’s role as a driving force in the fight against this devastating disease.
For his exceptional contribution to both the hospitality sector and the broader community, Paul was awarded the Medal of the Order of Australia (OAM) in the 2020 Australia Day Honours.
